  • 2 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • 1 tablespoon garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • 1 teaspoon salt
  • 1/2 teaspoon cayenne pepper (optional)
  • 4 tablespoons butter
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 (28 ounce) can crushed tomatoes
  • 1 cup heavy cream
  • 2 tablespoons chopped fresh cilantro, for garnish

Instructions

  1. In a bowl, combine chicken pieces with yogurt, lemon juice, garam masala, cumin, paprika, turmeric, salt, and cayenne pepper (if using). Marinate for at least 30 minutes, or preferably longer in the refrigerator.
  2. Melt butter in a skillet over medium heat. Add onion and cook until softened, about 5-7 minutes. Add garlic and ginger and cook for 1 minute more until fragrant.
  3. Transfer the onion mixture to your slow cooker.
  4. Add the marinated chicken and any remaining marinade to the slow cooker.
  5. Pour the crushed tomatoes over the chicken mixture. Stir to combine.
  6. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the chicken is tender and cooked through.
  7. Stir in the heavy cream during the last 30 minutes of cooking.
  8. Serve hot, garnished with fresh cilantro.

Notes

  • For a thicker sauce, you can remove the chicken and vegetables and simmer the sauce uncovered on the stovetop for a few minutes before returning the chicken and adding the cream.
  • Serve with rice or naan bread.
