3 lb pork shoulder (Boston butt), trimmed
1 cup chicken broth
1/2 cup soy sauce
1/2 cup honey
1/4 cup apple cider vinegar
6 cloves garlic, minced
1 tablespoon smoked paprika
1 teaspoon ground black pepper
1/2 teaspoon salt
Optional: 1 tablespoon cornstarch mixed with 2 tablespoons cold water (for thickening)
Instructions
Place the pork shoulder in the bottom of your slow cooker.
In a medium bowl, whisk together the chicken broth, soy sauce, honey, apple cider vinegar, minced garlic, smoked paprika, pepper, and salt.
Pour the sauce mixture over the pork shoulder in the slow cooker.
Cover the slow cooker and cook on LOW for 8 to 10 hours, or on HIGH for 4 to 5 hours, until the pork is very tender.
Carefully remove the pork from the slow cooker and place it on a cutting board. Shred the meat using two forks.
Skim any excess fat from the liquid remaining in the slow cooker.
If you want a thicker sauce, bring the liquid to a simmer on the stovetop over medium heat. Whisk in the cornstarch slurry and cook until the sauce thickens, about 2 minutes.
Return the shredded pork to the slow cooker and toss it well with the honey garlic sauce.
Serve immediately on buns or over rice.
Notes
For best results, cook the pork on the LOW setting for the longest time to ensure maximum tenderness.
You can prepare this recipe a day ahead; cool the pork and sauce separately, then combine and reheat before serving.
Serve this pulled pork on hamburger buns with coleslaw for a classic sandwich.
