  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1/2 cup maple syrup
  • 1/4 cup Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Season the chicken pieces lightly with salt and pepper. Place them in the bottom of your slow cooker.
  2. In a separate bowl, whisk together the maple syrup, Dijon mustard, apple cider vinegar, Worcestershire sauce, dried thyme, and garlic powder until smooth.
  3. Pour the maple Dijon mixture evenly over the chicken in the slow cooker.
  4. Cover the slow cooker and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours, until the chicken is cooked through and easily shreds.
  5. Remove the chicken and shred it using two forks. Return the shredded chicken to the sauce and stir to coat completely.
  6. Serve hot over rice, mashed potatoes, or alongside roasted vegetables.

  • For a thicker sauce, remove the lid for the last 30 minutes of cooking time.
  • You can substitute honey for maple syrup if needed, but adjust the amount slightly as honey is sweeter.
