A healthy and hearty slow cooker turkey chili recipe. This comforting soup is lighter than traditional beef chili, perfect for a satisfying meal.

Ingredients

  • 1.5 pounds lean ground turkey
  • 1 large onion, chopped
  • 2 bell peppers, chopped (any color)
  • 2 cans (15 ounces each) diced tomatoes, undrained
  • 1 can (15 ounces) kidney beans, rinsed and drained
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (15 ounces) pinto beans, rinsed and drained
  • 1 can (10 ounces) Rotel (diced tomatoes and green chilies), undrained
  • 1 can (4 ounces) green chilies, undrained
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • 1 cup low-sodium chicken or vegetable broth

Instructions

  1. Add the ground turkey to your slow cooker.
  2. Add the chopped onion and bell peppers.
  3. Stir in the diced tomatoes, kidney beans, black beans, pinto beans, Rotel, and green chilies.
  4. Add the chili powder, cumin, smoked paprika, garlic powder, onion powder, and cayenne pepper (if using).
  5. Season with salt and black pepper.
  6. Pour in the chicken or vegetable broth.
  7. Stir everything together until well combined.
  8. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the turkey is cooked through and the flavors have melded.
  9. Taste and adjust seasonings as needed before serving.
