Ingredients

  • For the Oreo Crust: 24 Oreo cookies, finely crushed; 6 tablespoons unsalted butter, melted
  • For the Brownie Layer: 1/2 cup (1 stick) unsalted butter, melted; 1 cup granulated sugar; 2 large eggs; 1 teaspoon vanilla extract; 1/3 cup unsweetened cocoa powder; 1/2 cup all-purpose flour; 1/4 teaspoon baking powder; 1/4 teaspoon salt
  • For the Cookie Dough Layer: 1/2 cup (1 stick) unsalted butter, softened; 1/2 cup packed light brown sugar; 1/4 cup granulated sugar; 1 large egg yolk; 1 teaspoon vanilla extract; 1 cup all-purpose flour; 1/2 teaspoon salt; 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. Prepare the Oreo crust: In a medium bowl, combine the finely crushed Oreo cookies and melted butter. Press the mixture evenly into the bottom of the prepared baking pan. Bake for 10 minutes. Let cool slightly.
  3. Prepare the brownie layer: In a medium bowl, whisk together the melted butter and granulated sugar. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate small bowl, whisk together the cocoa powder, flour, baking powder, and salt. Add the dry ingredients to the wet ingredients and mix until just combined.
  5. Pour the brownie batter over the cooled Oreo crust and spread evenly. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with moist crumbs. Let cool completely.
  6. Prepare the cookie dough layer: In a medium bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in the egg yolk and vanilla extract.
  7. In a small bowl, whisk together the flour and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the chocolate chips.
  8. Spread the cookie dough evenly over the cooled brownie layer.
  9. Chill the brownies in the refrigerator for at least 2 hours, or until firm, before cutting into bars.

Notes
