  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder

  • 1 large egg
  • 1 cup milk
  • 2 tablespoons unsalted butter, melted
  • 1/2 teaspoon vanilla extract
  • Fresh berries (strawberries, blueberries, raspberries)
  • Banana slices
  • Wooden skewers

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, whisk together the egg, milk, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. A few lumps are okay.
  4. Heat a lightly oiled griddle or non-stick pan over medium heat.
  5. Pour about 1/4 cup of batter onto the griddle for each pancake. Cook for 2-3 minutes per side, or until golden brown. Repeat with the remaining batter.
  6. Let the pancakes cool slightly.
  7. Arrange the fruit and pancake pieces on the skewers to create smiley faces. Use blueberries for eyes and a strawberry slice or banana for the mouth.
  8. Serve immediately.
