  • 1/2 cup rolled oats (quick or old-fashioned)
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon smoked paprika
  • 1 teaspoon chipotle powder
  • 1/2 teaspoon liquid smoke
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon soy sauce or tamari

Instructions

  1. Place the rinsed and drained black beans on a baking sheet lined with paper towels. Pat them dry thoroughly. This step helps prevent a mushy patty.
  2. Heat the olive oil in a small skillet over medium heat. Sauté the chopped onion until soft, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant. Remove from heat.
  3. In a large bowl, add half of the dried black beans. Mash them well with a fork until mostly smooth. Leave the other half of the beans whole for texture.
  4. Add the sautéed onion and garlic mixture, rolled oats, smoked paprika, chipotle powder, liquid smoke, cumin, salt, pepper, and soy sauce to the bowl.
  5. Mix all ingredients together using your hands or a sturdy spoon until just combined. Do not overmix.
  6. Divide the mixture into four equal portions. Form each portion into a firm patty, about 3/4 inch thick. Press the edges firmly to seal.
  7. Place the formed patties on a plate lined with parchment paper. Refrigerate for at least 30 minutes. This firms them up for cooking.
  8. Cook the patties using your preferred method: Pan-fry in a lightly oiled skillet over medium heat for 5-7 minutes per side, or bake at 375°F (190°C) for 15 minutes, flipping halfway through.

Notes

  • For an extra firm patty, you can pulse the oats in a food processor first to create a coarse flour before adding them to the mix.
  • If you prefer a stronger smoky flavor, increase the smoked paprika to 1 1/2 teaspoons.
  • These patties freeze well after the chilling step. Place parchment paper between layers before freezing.
