  • 1 pound breakfast sausage
  • 1 medium onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1-2 chipotle peppers in adobo sauce, minced (adjust to your spice preference)
  • 1 tablespoon adobo sauce
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • Salt and black pepper to taste
  • 4 large eggs
  • 1/4 cup chopped fresh cilantro
  • Optional toppings: shredded cheese, sour cream, avocado

Instructions

  1. In a large skillet, cook the breakfast sausage over medium-high heat until browned. Drain off any excess grease.
  2. Add the chopped onion and bell peppers to the skillet. Cook until softened, about 5-7 minutes.
  3. Stir in the minced garlic, minced chipotle peppers, adobo sauce, smoked paprika, and cumin. Cook for 1 minute until fragrant.
  4. Season with salt and black pepper to taste.
  5. Make four wells in the sausage and vegetable mixture. Crack an egg into each well.
  6. Cover the skillet and cook until the egg whites are set and yolks are cooked to your desired doneness, about 5-8 minutes.
  7. Garnish with fresh cilantro and any desired toppings.
  8. Serve immediately.

Notes

  • For a milder flavor, use only one chipotle pepper or omit the adobo sauce.
  • You can substitute other vegetables like mushrooms or jalapeƱos.
  • This dish is also delicious with diced cooked sweet potato or regular potato added with the onions and peppers.
