This recipe offers a delicious and comforting Southern-style smothered chicken. Tender chicken pieces are pan-fried to golden perfection and then simmered in a rich, savory gravy, often enhanced with onions and mushrooms. It’s a classic dish perfect for serving over rice or mashed potatoes.

Ingredients

  • 4 bone-in, skin-on chicken thighs
  • Salt, to taste
  • Black pepper, to taste
  • 1/2 cup all-purpose flour
  • 2 tablespoons vegetable oil
  • 1 large yellow onion, sliced
  • 8 ounces mushrooms, sliced (optional)
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1 tablespoon chopped fresh parsley, for garnish

Instructions

  1. Pat the chicken thighs dry with paper towels. Season generously with salt and black pepper.
  2. Dredge the chicken pieces in the flour, shaking off any excess.
  3. Heat the vegetable oil in a large skillet or Dutch oven over medium-high heat.
  4. Sear the chicken thighs, skin-side down, until golden brown and crispy, about 5-7 minutes. Flip and sear the other side for 3-4 minutes. Remove chicken from the skillet and set aside.
  5. Add the sliced onion to the skillet and cook until softened and lightly browned, about 5-7 minutes. If using mushrooms, add them with the onions and cook until they release their moisture and begin to brown.
  6. Stir in the minced garlic and cook for 1 minute until fragrant.
  7. Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Bring to a simmer.
  8. Return the chicken thighs to the skillet, nestling them into the liquid.
  9. Reduce the heat to low, cover the skillet, and simmer for 20-25 minutes, or until the chicken is cooked through and tender.
  10. Stir in the heavy cream and cook for another 2-3 minutes, until the gravy has thickened slightly.
  11. Taste and adjust seasoning with salt and pepper if needed.
  12. Serve the smothered chicken over rice or mashed potatoes, spooning plenty of gravy over the top. Garnish with fresh parsley.

Notes

  • For an extra flavorful gravy, you can add a splash of white wine or a tablespoon of Worcestershire sauce when you add the chicken broth.
  • If you prefer a thicker gravy, you can make a slurry with 1 tablespoon of cornstarch mixed with 2 tablespoons of cold water and stir it into the simmering gravy until thickened.
  • Feel free to add other vegetables like bell peppers or celery along with the onions.
