Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, melted
  • 2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 1/2 cups all-purpose flour
  • 1/4 cup packed light brown sugar
  • 2 tablespoons ground cinnamon
  • 2 tablespoons granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together the melted butter and granulated sugar until well combined.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the cinnamon, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. In a small bowl, combine the light brown sugar, cinnamon, and granulated sugar for the topping.
  7. Spread half of the blondie batter evenly into the prepared baking pan.
  8. Sprinkle half of the cinnamon-sugar mixture over the batter.
  9. Dollop the remaining blondie batter over the cinnamon-sugar layer, then spread it gently to cover.
  10. Sprinkle the remaining cinnamon-sugar mixture evenly over the top.
  11. Bake for 25-30 minutes, or until a wooden skewer inserted into the center comes out with moist crumbs attached.
  12. Let the blondies cool completely in the pan before cutting into bars.

Notes

  • For an extra snickerdoodle flavor, you can add 1/2 teaspoon of cream of tartar to the dry ingredients.
  • Ensure your butter is melted but not hot when adding it to the sugar.
  • Cooling completely before cutting will make for cleaner slices.
