Enjoy the warm, comforting flavor of snickerdoodles in an easy-to-make bar cookie. These Snickerdoodle Blondies are soft, chewy, and coated in cinnamon sugar for a delightful treat.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, melted
  • 2 cups granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • For the Cinnamon Sugar Topping:
  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan, or line it with parchment paper, leaving an overhang on the sides.
  2. In a large bowl, whisk together the melted butter and 2 cups of granulated sugar until well combined.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate medium bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. In a small bowl, combine the 1/2 cup of granulated sugar and 1 tablespoon of cinnamon for the topping.
  7. Spread about two-thirds of the blondie batter evenly into the prepared baking pan.
  8. Sprinkle half of the cinnamon sugar topping over the batter.
  9. Dollop the remaining one-third of the batter over the cinnamon sugar, then gently spread it to cover.
  10. Sprinkle the remaining cinnamon sugar topping over the top layer of batter.
  11. Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out with moist crumbs attached.
  12. Let the blondies cool completely in the pan on a wire rack before cutting into bars.

Notes

  • For chewier blondies, slightly underbake.
  • Ensure your baking soda is fresh for the best rise.
  • You can add a pinch of cream of tartar to the cinnamon sugar topping for a more authentic snickerdoodle tang.
