1 cup (2 sticks) unsalted butter, softened
1/2 cup powdered sugar, plus more for rolling
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1/4 teaspoon salt
1/2 cup finely chopped pecans or walnuts (optional)
Instructions
Preheat your oven to 325°F (160°C). Line baking sheets with parchment paper.
In a large bowl, cream together the softened butter and 1/2 cup powdered sugar until light and fluffy.
Beat in the vanilla extract.
In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. If using nuts, stir them in now.
Roll the dough into small, uniform balls, about 1 inch in diameter. Place them onto the prepared baking sheets, spacing them 2 inches apart.
Bake for 12 to 15 minutes, or until the edges are just barely set and the cookies remain pale. Do not let them brown.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Once cool, roll each cookie generously in powdered sugar. For a thicker coating, let them set for 10 minutes, then roll them a second time in powdered sugar.
Notes
For the best melt-in-your-mouth texture, do not overbake. These cookies should remain very light in color.
Chilling the dough for 30 minutes before rolling can help prevent spreading, especially if your kitchen is warm.
Use room temperature butter for proper creaming, which adds necessary air for a tender crumb.
