1 cup unsalted butter, softened
1 cup packed dark brown sugar
1 large egg
1/4 cup unsulfured (standard) molasses
2 1/4 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon salt
1/4 cup granulated sugar, for rolling
Instructions
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, cream together the softened butter and dark brown sugar until light and fluffy.
Beat in the egg and molasses until fully combined. Scrape down the sides of the bowl.
In a separate medium bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
Place the granulated sugar in a shallow dish. Roll the dough into 1-inch balls. Roll each ball thoroughly in the granulated sugar.
Place the sugared dough balls 2 inches apart on the prepared baking sheets.
Bake for 9 to 11 minutes. The edges should be set, but the centers will look slightly underdone and puffy.
Remove the sheets from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. The cookies will flatten and crack as they cool, developing their chewy texture.
Notes
Use standard (unsulfured) molasses for the best balance of flavor and moisture; blackstrap molasses is too strong for this recipe.
For extra chewiness, slightly underbake the cookies; they firm up as they cool.
Store the cooled cookies in an airtight container at room temperature with a slice of bread to help maintain softness.
