  • Chicken Broth: 6 cups
  • Shredded Cooked Chicken: 2 cups

  • Garlic, minced: 2 cloves
  • Olive Oil: 1 tablespoon
  • Fresh Thyme leaves: 1 teaspoon
  • Bay Leaf: 1

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the chopped onion and diced carrots and celery. Cook until softened, about 5 to 7 minutes.
  3. Stir in the minced garlic and thyme. Cook for 1 minute until fragrant.
  4. Pour in the chicken broth and add the bay leaf. Bring the mixture to a boil.
  5. Reduce the heat and simmer for 15 minutes, allowing the vegetables to become tender.
  6. Add the shredded cooked chicken and the egg noodles to the pot.
  7. Cook according to the noodle package directions, usually about 8 to 10 minutes, until the noodles are tender.
  8. Remove and discard the bay leaf.
  9. Season generously with salt and black pepper to your preference.
