One-Hour Sourdough Discard Dinner Rolls

Make soft, fluffy dinner rolls the same day using your extra sourdough starter discard. This quick recipe requires minimal rising time, perfect for weeknight meals.

  • 1 cup active sourdough discard
  • 1/2 cup warm milk (about 105-115F)
  • 2 tablespoons melted butter, plus more for brushing
  • 1 large egg
  • 1 teaspoon salt
  • 2 tablespoons granulated sugar
  • 2 1/4 teaspoons instant dry yeast
  • 2 1/2 cups all-purpose flour, plus more for dusting

Instructions

  1. In a large bowl, whisk together the warm milk, melted butter, egg, sugar, and instant yeast. Let stand for 5 minutes until slightly foamy.
  2. Stir in the sourdough discard and salt until combined.
  3. Gradually add the flour, mixing until a shaggy dough forms.
  4. Turn the dough out onto a lightly floured surface. Knead for 5 to 7 minutes until the dough is smooth and elastic. It will be slightly sticky.
  5. Place the dough in a lightly oiled bowl, turning to coat. Cover the bowl with plastic wrap or a clean towel. Let the dough rest in a warm spot for 30 minutes. It will puff up slightly.
  6. Gently punch down the dough. Divide it into 10 equal pieces. Roll each piece into a smooth ball.
  7. Arrange the dough balls in a greased 9×9 inch baking pan, leaving a small space between them for expansion.
  8. Cover the pan loosely and let the rolls proof for 20 minutes. They should look puffy.
  9. Preheat your oven to 375°F (190°C).
  10. Bake for 18 to 20 minutes, or until the tops are golden brown.
  11. Immediately brush the tops of the hot rolls with melted butter.
  12. Serve warm.

Notes

  • If your discard is very cold, let it sit at room temperature for 30 minutes before starting.
  • For pull-apart rolls, place them closer together in the pan.
  • You can substitute whole milk for regular milk for a richer flavor.
