2 pounds yellow squash, thinly sliced
1 medium onion, chopped
1 tablespoon butter
1 cup shredded cheddar cheese
1/2 cup sour cream
1/4 cup milk
1/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup crushed cornflakes
2 tablespoons melted butter
Instructions
Preheat your oven to 375°F (190°C).
In a large skillet, melt 1 tablespoon of butter over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
Add the thinly sliced squash to the skillet with the onions. Cook, stirring occasionally, until the squash is tender-crisp, about 8-10 minutes.
In a large bowl, combine the cooked squash and onion mixture with the shredded cheddar cheese, sour cream, milk, flour, salt, and pepper. Stir until well combined.
Pour the squash mixture into a greased 9×13 inch baking dish.
In a small bowl, combine the crushed cornflakes with 2 tablespoons of melted butter. Sprinkle this mixture evenly over the top of the squash casserole.
Bake for 25-30 minutes, or until the casserole is bubbly and the topping is golden brown and crispy.
Let stand for a few minutes before serving.
Notes
For a finer topping, you can pulse the cornflakes in a food processor.
Feel free to add a pinch of nutmeg for extra flavor.
