1 cup quinoa, rinsed
2 cups vegetable broth
1 (15 ounce) can black beans, rinsed and drained
1 cup corn, fresh or frozen
1/2 red onion, finely chopped
1/2 red bell pepper, chopped
1/4 cup cilantro, chopped
2 tablespoons lime juice
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon cumin
Salt and pepper to taste
Instructions
Cook quinoa: Combine quinoa and vegetable broth in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes, or until broth is absorbed. Let stand for 5 minutes, then fluff with a fork.
Prepare vegetables: In a medium bowl, combine black beans, corn, red onion, and red bell pepper.
Make dressing: In a small bowl, whisk together lime juice, olive oil, chili powder, and cumin. Season with salt and pepper.
Combine: Add the cooked quinoa and cilantro to the black bean mixture. Pour the dressing over the top and toss gently to combine.
Serve: Divide the mixture into bowls and serve immediately.
Notes
For extra flavor, add a pinch of cayenne pepper to the dressing.
Top with your favorite salsa, avocado, or a dollop of Greek yogurt.
This bowl can be made ahead and stored in the refrigerator for up to 3 days.
