1 pound cooked chicken breast, shredded or cubed
1 head romaine lettuce, chopped
1 (15 ounce) can black beans, rinsed and drained
1 cup frozen or canned corn, thawed or drained
1 large tomato, diced
1/2 red onion, thinly sliced
1/2 cup shredded Monterey Jack cheese
1/2 cup tortilla strips (optional)
For the Dressing: 1/2 cup plain Greek yogurt
2 tablespoons lime juice
1 tablespoon olive oil
1 teaspoon chipotle powder
1/2 teaspoon ground cumin
1/4 cup chopped fresh cilantro
Salt and pepper to taste
Instructions
Prepare the dressing: In a small bowl, whisk together the Greek yogurt, lime juice, olive oil, chipotle powder, cumin, cilantro, salt, and pepper until smooth. Set aside.
In a large bowl, combine the chopped romaine lettuce, shredded chicken, black beans, corn, diced tomato, sliced red onion, and shredded cheese.
Pour the desired amount of dressing over the salad ingredients.
Toss gently until everything is evenly coated.
Divide the salad into serving bowls. Top each serving with tortilla strips, if using.
Notes
For meal prepping, store the dressing separately from the salad ingredients until ready to serve.
You can substitute grilled steak or ground turkey for the chicken.
If you prefer a thinner dressing, add one teaspoon of water at a time until you reach your preferred consistency.
