  • 1 pound salmon fillet
  • 1/4 cup soy sauce
  • 2 tablespoons grated fresh ginger
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 clove garlic, minced
  • 1 cup uncooked rice
  • 2 cups water
  • 1 cup broccoli florets
  • 1/2 cup sliced carrots
  • 1/4 cup chopped green onions
  • Sesame seeds for garnish

Instructions

  1. In a bowl, whisk together soy sauce, grated ginger, sesame oil, rice vinegar, and minced garlic.
  2. Cut the salmon into 1-inch cubes and add to the marinade. Toss to coat. Let marinate for at least 15 minutes.
  3. Cook the rice according to package directions.
  4. While the rice is cooking, steam or stir-fry the broccoli and carrots until tender-crisp.
  5. Cook the marinated salmon in a skillet over medium-high heat for 3-4 minutes per side, or until cooked through.
  6. Serve the cooked salmon and vegetables over the cooked rice.
