Ingredients

Scale
  • 2 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground cardamom
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon ground cloves
  • 0.5 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1.5 cups granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup grated carrots (about 2 medium carrots)
  • 0.5 cup full-fat yogurt
  • 0.25 cup milk
  • 0.5 cup chopped nuts (like almonds or pistachios), optional
  • For the Glaze:
  • 1 cup powdered sugar
  • 2-3 tablespoons milk
  • 0.25 teaspoon ground cardamom

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, cardamom, nutmeg, cloves, and salt. Set aside.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. In a separate small bowl, whisk together the grated carrots, yogurt, and milk.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the carrot mixture. Begin and end with the dry ingredients, mixing until just combined. Do not overmix.
  7. If using, fold in the chopped nuts.
  8. Pour the batter into the prepared cake pan and spread evenly.
  9. Bake for 30-40 minutes, or until a wooden skewer inserted into the center comes out clean.
  10. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  11. While the cake cools, prepare the glaze. In a small bowl, whisk together the powdered sugar, milk, and cardamom until smooth and pourable. Add more milk if needed to reach desired consistency.
  12. Once the cake is completely cool, drizzle the glaze over the top.

Notes

  • Ensure your carrots are finely grated for the best texture.
  • Using full-fat yogurt will contribute to a moister cake.
  • You can toast the nuts before adding them for extra flavor.
  • The glaze can be adjusted to your sweetness preference.
