1 1/4 cups all-purpose flour
1/2 teaspoon salt
1/2 cup (1 stick) cold unsalted butter, cut into cubes
1/4 cup ice water
3 medium ripe pears (such as Bosc or Anjou), peeled, cored, and thinly sliced
1/4 cup granulated sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1 tablespoon lemon juice
1/4 cup sliced almonds
2 tablespoons brown sugar
1 tablespoon all-purpose flour
1 tablespoon unsalted butter, melted
Instructions
In a large bowl, whisk together the flour and salt. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
Gradually add the ice water, 1 tablespoon at a time, mixing until the dough just comes together. Do not overmix.
Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
Preheat your oven to 375°F (190°C).
In a separate bowl, gently toss the sliced pears with granulated sugar, cinnamon, nutmeg, ginger, and lemon juice.
On a lightly floured surface, roll out the chilled dough into a 12-inch circle. Transfer the dough to a baking sheet lined with parchment paper.
Arrange the spiced pear slices in the center of the dough, leaving a 2-inch border. Fold the border up and over the edges of the pears, pleating as needed.
In a small bowl, combine the sliced almonds, brown sugar, and 1 tablespoon of flour. Stir in the melted butter until the mixture is crumbly.
Sprinkle the almond mixture evenly over the pears.
Bake for 35-45 minutes, or until the crust is golden brown and the pears are tender.
Let the galette cool slightly on the baking sheet before slicing and serving.
Notes
For an extra nutty flavor, toast the sliced almonds lightly before adding them to the topping mixture.
Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
If your pears are very juicy, you can drain them slightly after tossing with the spices and sugar.
