  • 2 lbs Chicken Wings (flats and drumettes)
  • 1 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/2 cup Honey
  • 1/4 cup Fresh Lime Juice
  • 2 tablespoons Soy Sauce
  • 1 tablespoon Sriracha (or to taste)
  • 1 teaspoon Garlic Powder
  • 1/2 teaspoon Ginger Powder
  • Lime zest for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top.
  2. Pat the chicken wings very dry using paper towels. This step helps them crisp.
  3. In a bowl, toss the wings with olive oil, salt, and pepper.
  4. Arrange the seasoned wings in a single layer on the wire rack.
  5. Bake for 20 minutes.
  6. While the wings bake, whisk together the honey, lime juice, soy sauce, Sriracha, garlic powder, and ginger powder in a small saucepan. Heat gently until combined, but do not boil. This is your sauce.
  7. After 20 minutes, remove the wings from the oven. Brush half of the sauce mixture generously over all sides of the wings.
  8. Return the wings to the oven and bake for another 15-20 minutes, or until cooked through and slightly caramelized.
  9. Remove the wings from the oven. Toss them immediately in the remaining sauce until fully coated.
  10. Serve hot, garnished with fresh lime zest.

  • Drying the wings thoroughly is key for crispy skin.
  • For extra heat, add a pinch of red pepper flakes to the sauce.
  • If you prefer thicker sauce, simmer the sauce mixture longer until it reduces slightly before brushing.
