Ingredients

Scale
  • 1 lb ground beef
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/4 cup low-sodium soy sauce
  • 3 tablespoons brown sugar
  • 2 tablespoons gochujang (Korean chili paste)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon black pepper
  • Cooked white or brown rice, for serving
  • Optional toppings: sesame seeds, sliced green onions

Instructions

  1. Heat the vegetable oil in a large skillet over medium-high heat.
  2. Add the ground beef to the skillet. Cook, breaking it apart, until fully browned. Drain off any excess fat.
  3. Stir in the minced garlic and grated ginger. Cook for one minute until fragrant.
  4. In a small bowl, whisk together the soy sauce, brown sugar, gochujang, rice vinegar, sesame oil, and black pepper to create the sauce.
  5. Pour the sauce over the beef mixture in the skillet.
  6. Stir well to coat the beef completely. Bring the sauce to a simmer and cook for 3 to 5 minutes, allowing the sauce to thicken slightly and glaze the beef.
  7. Serve the spicy Korean beef immediately over bowls of cooked rice.
  8. Garnish with sesame seeds and sliced green onions, if desired.

Notes

  • If you prefer a spicier kick, increase the gochujang amount slightly.
  • For a less sweet profile, reduce the brown sugar by one teaspoon.
  • This beef keeps well in the refrigerator for up to three days.
