Make this bright, tropical Spicy Mango Chicken Bowl. You get juicy chicken coated in a sweet and spicy glaze, perfect for adding excitement to your weeknight meals or meal prep rotation. This recipe fixes common pitfalls to deliver a foolproof, flavorful dish.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 large ripe mango, diced
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 tablespoon sriracha (adjust to your spice preference)
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 cup chicken broth
  • 1 teaspoon cornstarch mixed with 1 tablespoon cold water (slurry)
  • For Serving: Cooked rice, sliced avocado, chopped cilantro, lime wedges

Instructions

  1. In a small bowl, whisk together the soy sauce, honey, rice vinegar, sriracha, ginger, and garlic. This is your sauce base.
  2. Heat the olive oil in a large skillet or wok over medium-high heat. Add the chicken pieces. Cook until lightly browned on all sides, about 5-7 minutes.
  3. Pour the prepared sauce mixture over the chicken. Stir to coat everything well.
  4. Let the sauce simmer for 2 minutes, allowing the chicken to absorb the flavor.
  5. Pour in the chicken broth. Bring the mixture to a gentle boil.
  6. Stir the cornstarch slurry one last time and slowly pour it into the skillet while stirring constantly. Cook until the sauce thickens, about 1-2 minutes.
  7. Remove the skillet from the heat. Gently fold in the diced fresh mango. You want the mango to warm slightly but retain its shape and fresh texture.
  8. Serve immediately over cooked rice. Top your bowls with avocado, fresh cilantro, and a squeeze of lime juice.

Notes

  • For a deeper spice level, add a pinch of red pepper flakes with the sriracha.
  • If you prefer a thicker glaze, use slightly less broth or add a little more cornstarch slurry.
  • If you are meal prepping, keep the mango separate until serving time to maintain its fresh texture.
