Make a fresh, vibrant salsa balancing sweet mango with heat from jalapeño and lime juice.

Ingredients

  • 2 large ripe mangoes, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño pepper, seeded and minced (use 2 for more heat)
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup fresh lime juice (about 2 limes)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Peel and dice the mangoes into small, uniform pieces. Place them in a medium bowl.
  2. Add the finely chopped red onion, minced jalapeño, and chopped cilantro to the bowl with the mango.
  3. Pour the fresh lime juice over the ingredients.
  4. Sprinkle with salt and pepper.
  5. Gently mix all ingredients together until just combined. Do not overmix.
  6. Taste the salsa. Add more lime juice for brightness or more jalapeño for heat if desired.
  7. Cover the bowl and chill the salsa in the refrigerator for at least 15 minutes before serving to allow the flavors to meld.

Notes

  • Use mangoes that are firm but yield slightly to gentle pressure for the best texture.
  • If you prefer less heat, remove all seeds and white membranes from the jalapeño.
  • This salsa pairs well with grilled fish, chicken, or tortilla chips.
