  • 1 large sweet potato, spiralized
  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon rice vinegar
  • 1 tablespoon maple syrup
  • 1 teaspoon sriracha (or more, to taste)
  • 1 clove garlic, minced
  • 1/2 inch ginger, grated
  • 2-3 tablespoons hot water (to thin sauce)
  • 1/4 cup chopped peanuts, for garnish
  • 2 green onions, thinly sliced, for garnish

Instructions

  1. Prepare the sweet potato noodles using a spiralizer. Set aside.
  2. In a medium bowl, whisk together peanut butter, soy sauce, rice vinegar, maple syrup, sriracha, minced garlic, and grated ginger until well combined.
  3. Add hot water, one tablespoon at a time, whisking until the sauce reaches your desired consistency.
  4. Add the spiralized sweet potato noodles to the bowl with the sauce.
  5. Toss gently to coat the noodles evenly.
  6. Serve immediately, garnished with chopped peanuts and sliced green onions.

Notes

  • For a gluten-free version, use tamari instead of soy sauce.
  • Adjust the sriracha level to your preferred spice preference.
  • If you don’t have a spiralizer, you can julienne the sweet potato or use pre-cut sweet potato noodles.
