Spicy Turkey and White Bean Chili

A hearty, smoky chili using ground turkey and cannellini beans, seasoned with chipotle and cayenne for medium-high heat.

  • 1 tablespoon olive oil
  • 1 pound ground turkey (93% lean or higher)
  • 1 large yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 1 (15 ounce) can Great Northern beans, rinsed and drained
  • 1 (14.5 ounce) can fire-roasted diced tomatoes, undrained
  • 1 (4 ounce) can diced green chiles, undrained
  • 1 cup low-sodium chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (adjust for heat)
  • 1 chipotle pepper in adobo sauce, minced (remove seeds for less heat)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess fat.
  2. Add the chopped onion to the pot and cook until softened, about 5 minutes.
  3. Stir in the minced garlic, chili powder, cumin, oregano, smoked paprika, and cayenne pepper. Cook for 1 minute until fragrant.
  4. Add the rinsed beans, fire-roasted tomatoes (with juice), green chiles (with juice), chicken broth, minced chipotle pepper, salt, and black pepper. Stir well to combine all ingredients.
  5. Bring the chili to a simmer. Reduce the heat to low, cover, and cook for at least 30 minutes, stirring occasionally. For deeper flavor, simmer for 1 hour.
  6. Taste the chili and adjust salt or cayenne pepper as needed before serving.

Notes

  • To adjust heat: Omit the cayenne pepper for mild heat. For hotter chili, add a second minced chipotle pepper or increase the cayenne to 1/2 teaspoon.
  • Bean substitution: You can substitute navy beans or Great Northern beans for cannellini beans, or use shredded cooked turkey breast instead of ground turkey.
  • Slow Cooker Method: Brown the turkey and sauté the onion/garlic on the stovetop first. Transfer everything to the slow cooker, add the remaining ingredients, and cook on low for 6-8 hours or high for 3-4 hours.
