1 sheet puff pastry, thawed
1 cup chopped fresh spinach
1/2 cup crumbled feta cheese
1 tablespoon olive oil
1 clove garlic, minced
Salt and pepper to taste
1 egg, beaten (for egg wash)
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a skillet, heat olive oil over medium heat. Add minced garlic and cook for about 30 seconds until fragrant.
Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Season with salt and pepper. Remove from heat and let it cool slightly.
In a small bowl, combine the wilted spinach and crumbled feta cheese. Mix well.
Unfold the thawed puff pastry sheet on a lightly floured surface. Cut the pastry into 2-inch squares.
Place about a tablespoon of the spinach and feta mixture onto the center of each puff pastry square.
Fold the pastry to create a triangle or a small parcel, pressing the edges to seal. You can use a fork to crimp the edges for a better seal.
Place the filled pastry bites onto the prepared baking sheet.
Brush the tops of the pastry bites with the beaten egg wash.
Bake for 15-20 minutes, or until the puff pastry is golden brown and puffed up.
Serve warm.
Notes
You can add a pinch of red pepper flakes to the spinach mixture for a little heat.
Ensure the puff pastry is completely thawed but still cold before cutting.
For a richer flavor, you can add a tablespoon of cream cheese to the filling.
