1 sheet puff pastry, thawed
1 cup chopped fresh spinach
1/2 cup crumbled feta cheese
1 egg, beaten
Instructions
Preheat your oven to 400°F (200°C).
Unfold the puff pastry sheet on a lightly floured surface.
In a small bowl, combine the chopped spinach and crumbled feta cheese.
Cut the puff pastry into 9 equal squares.
Place about a tablespoon of the spinach and feta mixture onto the center of each puff pastry square.
Brush the edges of the pastry with the beaten egg.
Fold the pastry squares in half diagonally to form triangles, pressing the edges to seal.
Place the bites on a baking sheet lined with parchment paper.
Brush the tops of the bites with the remaining beaten egg.
Bake for 15-20 minutes, or until golden brown and puffed.
Notes
For extra flavor, you can add a pinch of garlic powder to the spinach and feta mixture.
Ensure the puff pastry is fully thawed but still cold for the best results.
