1/4 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
1 cup sliced mushrooms
2 cups fresh spinach
1/4 cup shredded cheese (optional)
Instructions
Preheat your oven to 375°F (190°C).
In a medium bowl, whisk together the eggs, milk, salt, and pepper until well combined.
Heat the olive oil in an oven-safe skillet over medium heat.
Add the sliced mushrooms to the skillet and cook until softened, about 5 minutes.
Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
Pour the egg mixture evenly over the vegetables in the skillet.
If using, sprinkle the shredded cheese over the top.
Transfer the skillet to the preheated oven.
Bake for 20-25 minutes, or until the frittata is set and lightly golden.
Let it cool slightly before slicing and serving.
Notes
You can add other vegetables like onions or bell peppers with the mushrooms.
