  • 2 large flour tortillas
  • 1 tablespoon olive oil
  • 1 cup sliced mushrooms
  • 2 cups fresh spinach
  • 1/4 cup chopped onion
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese

Instructions

  1. Heat olive oil in a skillet over medium heat. Add mushrooms and onion, and cook until softened, about 5 minutes.
  2. Add garlic, salt, and pepper, and cook for 1 minute more until fragrant.
  3. Add spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat.
  4. Lay one tortilla flat. Sprinkle half of the cheese over one half of the tortilla.
  5. Spoon the spinach and mushroom mixture over the cheese.
  6. Sprinkle the remaining cheese over the mixture.
  7. Fold the other half of the tortilla over the filling.
  8. Carefully place the quesadilla in the skillet and cook for 3-4 minutes per side, until golden brown and the cheese is melted.
  9. Repeat with the second tortilla.
  10. Cut into wedges and serve immediately.

Notes

  • For extra flavor, add a pinch of red pepper flakes with the garlic.
  • Serve with your favorite salsa, sour cream, or guacamole.
  • You can substitute the cheeses with your preferred blend.
