Enjoy a lighter, healthier take on a classic with this Spiralized Zucchini Shrimp Scampi. Fresh zucchini noodles are tossed with succulent shrimp in a bright, garlicky lemon butter sauce for a quick and delicious meal.

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 medium zucchinis, spiralized
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup dry white wine (optional)
  • 1/4 cup fresh lemon juice
  • 2 tablespoons chopped fresh parsley
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Pat the shrimp dry with paper towels and season with salt and pepper.
  2. Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
  3. Add shrimp to the skillet in a single layer and cook for 1-2 minutes per side, until pink and opaque. Remove shrimp from skillet and set aside.
  4. Add the remaining 3 tablespoons of butter to the skillet. Once melted, add the minced garlic and red pepper flakes (if using) and cook until fragrant, about 1 minute.
  5. Pour in the white wine (if using) and lemon juice. Bring to a simmer and cook for 2-3 minutes, scraping up any browned bits from the bottom of the skillet.
  6. Add the spiralized zucchini noodles to the skillet and toss to coat with the sauce. Cook for 2-3 minutes, until the zucchini is tender-crisp.
  7. Return the cooked shrimp to the skillet. Add the chopped parsley and toss everything together.
  8. Season with additional salt and pepper to taste. Serve immediately.

Notes

  • For best results, use a spiralizer to create thin zucchini noodles.
  • If you don’t have a spiralizer, you can use a julienne peeler or a mandoline to create noodle-like strips.
  • Avoid overcooking the zucchini noodles, as they can become mushy.
  • Feel free to add other vegetables like cherry tomatoes or spinach for extra flavor and nutrients.
