6 cups spring mix greens
1 pint fresh strawberries, hulled and sliced
4 ounces goat cheese, crumbled
1/2 cup pecans, toasted
1/4 cup balsamic vinegar
3 tablespoons olive oil
1 tablespoon maple syrup
1 teaspoon Dijon mustard
Salt and black pepper to taste
Instructions
Prepare the vinaigrette: In a small bowl, whisk together the balsamic vinegar, olive oil, maple syrup, and Dijon mustard. Season with salt and pepper. Set aside.
In a large bowl, combine the spring mix greens and sliced strawberries.
Gently toss the greens and strawberries with about half of the prepared vinaigrette. Add more dressing as needed, but do not overdress.
Divide the salad among serving plates.
Top each serving evenly with crumbled goat cheese and toasted pecans.
Serve immediately.
Notes
Toast pecans in a dry skillet over medium heat for 3 to 5 minutes until fragrant. Watch carefully to prevent burning.
For a different flavor, substitute walnuts for pecans or use a poppy seed dressing instead of balsamic.
You can add 1/2 sliced avocado for extra creaminess.
