  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1/4 cup shelled pistachios, finely ground
  • 1 1/4 cups milk
  • 1 egg
  • 3 tablespoons butter, melted
  • Green food coloring (optional)

Instructions

  1. In a large bowl, sift together the flour, baking powder, salt, and sugar.
  2. Stir in the finely ground pistachios.
  3. Make a well in the center and pour in the milk, egg, and melted butter.
  4. Whisk until just combined; a few lumps are okay.
  5. If desired, add a few drops of green food coloring and stir until the batter is a uniform green.
  6. Heat a lightly oiled griddle or frying pan over medium-high heat.
  7. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
  8. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
  9. Serve warm.
