2 (8 ounce) top sirloin steaks, about 1 inch thick
1 tablespoon olive oil
1 small yellow onion, thinly sliced
3 cloves garlic, minced
1 (14.5 ounce) can diced tomatoes, undrained
1/2 cup dry red wine or beef broth
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Season both sides of the steaks lightly with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat. Sear the steaks for 2 to 3 minutes per side until browned. Remove the steaks from the skillet and set them aside.
Reduce the heat to medium. Add the sliced onion to the skillet and cook until softened, about 5 minutes.
Add the minced garlic and cook for 1 minute until fragrant.
Pour in the diced tomatoes (with their juice) and the red wine or broth. Stir well, scraping up any browned bits from the bottom of the pan.
Stir in the dried oregano, salt, and pepper. Bring the sauce to a simmer.
Return the steaks to the skillet, nestling them into the sauce.
Cover the skillet, reduce the heat to low, and simmer for 15 to 20 minutes, or until the steaks reach your desired doneness.
Remove the steaks and let them rest for 5 minutes. Spoon the sauce generously over the steaks.
Garnish with fresh parsley before serving.
Notes
Serve this dish over cooked pasta, creamy polenta, or with crusty bread to soak up the sauce.
For a richer flavor, use good quality canned tomatoes.
If you prefer a thicker sauce, remove the lid for the last 5 minutes of simmering.
