  • 1 cup pitted dates, chopped
  • 1 teaspoon baking soda
  • 1/2 cup boiling water
  • 1/4 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • For the Maple Caramel Drizzle:
  • 1/2 cup packed brown sugar
  • 1/4 cup unsalted butter
  • 1/4 cup heavy cream
  • 2 tablespoons maple syrup
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8×8 inch baking dish.
  2. In a medium bowl, combine the chopped dates and baking soda. Pour the boiling water over the dates and let them soak for 10 minutes.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. In a separate bowl, whisk together the flour, baking powder, and salt.
  6. Add the dry ingredients to the wet ingredients alternately with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  7. Gently fold in the softened date mixture.
  8. Pour the batter into the prepared baking dish and spread evenly.
  9. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  10. While the pudding bakes, prepare the maple caramel drizzle. In a small saucepan over medium heat, combine the brown sugar, butter, heavy cream, maple syrup, and salt.
  11. Stir constantly until the butter is melted and the mixture is smooth and bubbling. Reduce heat and simmer for 2-3 minutes, stirring occasionally.
  12. Once the pudding is out of the oven, let it cool slightly. Drizzle the warm maple caramel sauce over the top before serving.

Notes

  • For an extra rich flavor, use dark brown sugar in the drizzle.
  • Serve warm with vanilla ice cream or whipped cream.
