Make a moist and flavorful meatloaf using Stove Top stuffing mix for seasoning and texture. This recipe is quick and perfect for a weeknight dinner.

  • 2 lbs ground beef (80/20 recommended)
  • 1 box (6 oz) Stove Top Stuffing Mix (any flavor)
  • 1 cup milk
  • 2 large eggs, lightly beaten
  • 1/2 cup ketchup, plus more for topping
  • 1/4 cup finely chopped onion
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×5 inch loaf pan.
  2. In a large bowl, combine the Stove Top Stuffing Mix and milk. Let it sit for 5 minutes to allow the stuffing to absorb the liquid.
  3. Add the ground beef, beaten eggs, 1/2 cup ketchup, chopped onion, Worcestershire sauce, and pepper to the stuffing mixture.
  4. Mix all ingredients gently with your hands until just combined. Do not overmix.
  5. Press the mixture evenly into the prepared loaf pan.
  6. Spread an additional 1/4 cup of ketchup evenly over the top of the meatloaf.
  7. Bake for 50 to 60 minutes, or until the internal temperature reaches 160 degrees Fahrenheit.
  8. Remove from the oven and let the meatloaf rest in the pan for 10 minutes before slicing and serving.

Notes

  • For an extra moist result, substitute half of the ground beef with ground turkey.
  • If you prefer a glaze instead of plain ketchup, mix 1/2 cup ketchup with 2 tablespoons of brown sugar and 1 teaspoon of apple cider vinegar for the topping.
  • This meatloaf freezes well after cooking. Cool completely, slice, wrap tightly, and freeze for up to three months.
