Make creamy, homemade ice cream using fresh strawberries and ripe bananas. This recipe works well with or without an ice cream maker.

  • 2 cups fresh or frozen strawberries, hulled and halved
  • 2 large ripe bananas, peeled and sliced
  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract

Instructions

  1. If using fresh fruit, freeze the strawberries and banana slices for at least 4 hours until solid.
  2. Combine the frozen fruit, heavy cream, milk, sugar, and vanilla extract in a high-powered blender or food processor.
  3. Blend the mixture until it is completely smooth and creamy. Stop and scrape down the sides as needed.
  4. If using an ice cream maker, pour the mixture into the pre-frozen freezer bowl and churn according to the manufacturer’s directions (usually 20-25 minutes) until it reaches a soft-serve consistency.
  5. If making no-churn ice cream, transfer the mixture to a freezer-safe container, cover tightly, and freeze for at least 6 hours, stirring every 90 minutes for the first 3 hours to break up ice crystals.
  6. Serve immediately for a soft texture, or freeze longer for a firmer scoop.

Notes

  • For a dairy-free or vegan version, substitute the heavy cream and milk with full-fat coconut milk or cashew milk.
  • Adjust the sugar amount based on the sweetness of your fruit. Taste the base mixture before churning.
  • If you prefer a thicker, more intense strawberry flavor, use frozen fruit exclusively.
