Enjoy a creamy, dessert-inspired breakfast with these Strawberry Cheesecake Overnight Oats. This recipe fixes common pitfalls to deliver a foolproof, indulgent start to your day.

Ingredients

  • Rolled Oats: 1/2 cup
  • Milk (dairy or non-dairy): 1/2 cup
  • Greek Yogurt (plain): 1/4 cup
  • Chia Seeds: 1 tablespoon
  • Maple Syrup or Honey: 1 teaspoon (or to taste)
  • Vanilla Extract: 1/4 teaspoon
  • Cream Cheese (softened): 2 tablespoons
  • Strawberries (fresh or frozen, chopped): 1/2 cup
  • Lemon Juice: 1/2 teaspoon

Instructions

  1. In a jar or container, combine the rolled oats, milk, Greek yogurt, chia seeds, maple syrup, and vanilla extract. Stir well until everything is mixed.
  2. In a separate small bowl, mash or whisk the softened cream cheese with the lemon juice until smooth. This prevents clumps.
  3. Gently fold the chopped strawberries into the oat mixture.
  4. Spoon the cream cheese mixture over the top of the oats. Do not stir it completely in; you want swirls of ‘cheesecake’ flavor.
  5. Seal the container and refrigerate for at least 6 hours, or preferably overnight.
  6. In the morning, stir gently before eating. Add a splash more milk if the oats are too thick for your liking.

Notes

  • For a thicker ‘cheesecake’ layer, use full-fat cream cheese.
  • If using frozen strawberries, they will release more liquid, making the oats runnier. Adjust milk quantity as needed.
  • This recipe makes one serving. Scale up the quantities to prep multiple servings at once.
  • Taste before adding sweetener; the strawberries and yogurt may provide enough sweetness for you.
