Instructions
Preheat your oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners or grease well.
Prepare the streusel topping if using: In a small bowl, combine the flour, brown sugar, and cinnamon. Cut in the cold butter using your fingers or a pastry blender until the mixture resembles coarse crumbs. Set aside.
In a large bowl, whisk together the 1 3/4 cups flour, granulated sugar, baking powder, and salt.
In a separate medium bowl, whisk the melted butter, eggs, milk, and vanilla extract until combined.
Pour the wet ingredients into the dry ingredients. Mix gently with a spatula until just combined. Do not overmix; a few lumps are fine. Overmixing develops gluten and results in tough muffins.
Gently fold in the diced fresh strawberries.
Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.
If using the streusel, sprinkle the topping evenly over the batter in each cup.
