  • 3/4 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, chopped
  • 1/4 cup heavy cream (for topping, optional)
  • 1 tablespoon coarse sugar (for topping, optional)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a 12-cup muffin tin with paper liners or grease it well.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt. This is your dry mix.
  3. In a separate medium bowl, whisk together the milk, vegetable oil, egg, and vanilla extract. This is your wet mix.
  4. Pour the wet ingredients into the dry ingredients. Mix them gently with a spatula until just combined. Do not overmix; a few lumps are fine.
  5. Gently fold in the chopped fresh strawberries.
  6. Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.
  7. If using the topping, lightly drizzle a small amount of heavy cream over the top of each muffin and sprinkle with coarse sugar.
  8. Bake for 16 to 18 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the muffins cool in the tin for 5 minutes before moving them to a wire rack to cool completely.

Notes

  • For a true shortcake flavor, you can lightly dust the tops with powdered sugar after they cool.
  • If you want to speed up the process, use frozen strawberries (do not thaw them first).
