  • 4 large bell peppers
  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 cup cooked rice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • 1/4 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large skillet, brown the ground beef over medium heat. Drain off any excess fat.
  4. Add the chopped onion and minced garlic to the skillet and cook until softened, about 5 minutes.
  5. Stir in the diced tomatoes, cooked rice, salt, pepper, oregano, and basil. Mix well.
  6. Spoon the mixture evenly into the prepared bell peppers.
  7. Place the stuffed peppers in a baking dish.
  8. Cover the baking dish with foil.
  9. Bake for 30 minutes.
  10. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is melted and bubbly (if using).

Notes

  • You can substitute cauliflower rice for regular rice for a lower-carb option.
  • Feel free to add other seasonings like paprika or chili powder to the meat mixture.
