Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 cup brown or green lentils, rinsed
  • 4 cups vegetable broth
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and black pepper to taste
  • 4 large potatoes, peeled and quartered
  • 1/4 cup milk
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery. Cook until softened, about 8-10 minutes.
  2. Add minced garlic and cook for 1 minute more until fragrant.
  3. Stir in the rinsed lentils, vegetable broth, chopped sun-dried tomatoes, thyme, and rosemary.
  4. Bring the mixture to a boil, then reduce heat, cover, and simmer for 30-40 minutes, or until lentils are tender. Season with salt and pepper to taste.
  5. While the lentils are simmering, place the quartered potatoes in a separate pot and cover with cold water. Add a pinch of salt. Bring to a boil and cook until fork-tender, about 15-20 minutes.
  6. Drain the potatoes and return them to the pot. Add milk and butter. Mash until smooth and creamy. Season with salt and pepper.
  7. Preheat your oven to 375°F (190°C).
  8. Pour the lentil mixture into a baking dish.
  9. Spread the mashed potatoes evenly over the lentil filling.
  10. Bake for 20-25 minutes, or until the top is golden brown and the filling is bubbly.

Notes

  • For a richer flavor, you can add a splash of red wine to the lentil mixture after sautéing the vegetables.
  • Feel free to add other vegetables like peas or corn to the lentil filling.
  • If you prefer a crispier potato topping, you can broil the pie for the last few minutes of baking, watching carefully to prevent burning.
