A delightful sushi bake casserole with layers of seasoned rice, creamy seafood filling, and nori, baked until golden and scoopable.

Ingredients

  • 1 cup Sushi Rice
  • 2 cups Water
  • 2 tbsp Rice Vinegar
  • 1 tbsp Sugar
  • 1/2 tsp Salt
  • 8 oz Imitation Crab Meat, chopped
  • 1/2 cup Mayonnaise
  • 1 tbsp Soy Sauce
  • 1 tsp Sriracha (optional)
  • 1/4 cup Green Onions, chopped
  • 1/4 cup Furikake Seasoning
  • 2 sheets Nori, cut into small pieces

Instructions

  1. Cook sushi rice according to package directions. While rice is cooking, mix rice vinegar, sugar, and salt in a small bowl until dissolved.
  2. Once rice is cooked, transfer to a large bowl. Pour the vinegar mixture over the rice and gently mix to combine. Let it cool slightly.
  3. In a separate bowl, mix the chopped imitation crab meat, mayonnaise, soy sauce, and sriracha (if using) together.
  4. Spread the seasoned sushi rice evenly into a greased 8×8 inch baking dish.
  5. Top the rice with the crab mixture, spreading it evenly.
  6. Sprinkle the green onions and furikake seasoning over the crab layer.
  7. Arrange the nori pieces on top.
  8. Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until the top is golden brown and bubbly.
  9. Let it cool for a few minutes before serving.

Notes

  • You can use cooked shrimp or salmon instead of imitation crab.
  • Adjust sriracha to your spice preference.
  • Garnish with extra green onions or sesame seeds if desired.
