  • 1 teaspoon cornstarch
  • 2 tablespoons water

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, gently combine the ground chicken, panko breadcrumbs, egg, 1 tablespoon soy sauce, ginger, garlic powder, salt, and pepper. Do not overmix.
  3. Roll the mixture into small, uniform meatballs (about 1 inch diameter). Place them on the prepared baking sheet.
  4. Bake the meatballs for 15-18 minutes, or until they are cooked through and lightly browned.
  5. While the meatballs bake, prepare the sauce. In a small saucepan, whisk together the ketchup, brown sugar, rice vinegar, and 1 tablespoon soy sauce.

  7. In a separate small bowl, whisk the cornstarch and water to create a slurry.
  8. Pour the slurry into the simmering sauce, whisking constantly until the sauce thickens, about 1 minute. Remove from heat.
  9. In a large skillet, combine the cooked meatballs, pineapple chunks, bell pepper, and red onion.
  10. Pour the sweet and sour sauce over the meatballs and vegetables. Toss gently to coat everything evenly.
  11. Heat over medium-low heat for 2-3 minutes until the vegetables are slightly tender and the sauce is hot.
