  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon soy sauce
  • 1 teaspoon cornstarch
  • 1 tablespoon vegetable oil
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, thinly sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/4 cup sweet chili sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon brown sugar
  • 1 teaspoon sesame oil
  • Optional: Toasted sesame seeds for garnish

Instructions

  1. Toss the chicken pieces with 1 tablespoon soy sauce and cornstarch. Set aside for 10 minutes.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken and set aside.
  4. Add the bell pepper, broccoli, and carrot to the skillet. Stir fry for 3-4 minutes until crisp-tender.
  5. Add the minced garlic and grated ginger to the vegetables. Cook for 1 minute until fragrant.
  6. In a small bowl, whisk together the sweet chili sauce, 2 tablespoons soy sauce, rice vinegar, and brown sugar.
  7. Return the cooked chicken to the skillet. Pour the sauce mixture over the chicken and vegetables.
  8. Toss everything together quickly until the sauce thickens slightly and coats all ingredients, about 1 minute.
  9. Remove from heat and stir in the sesame oil.
  10. Serve immediately, garnished with sesame seeds if desired.

Notes

  • For extra heat, add a pinch of red pepper flakes with the garlic and ginger.
  • If you prefer darker chicken, use chicken thighs instead of breasts.
  • You can substitute any quick-cooking vegetables you have on hand, such as snow peas or mushrooms.
