  • 2 tablespoons sweet chili sauce
  • 1 tablespoon soy sauce

  • 1 teaspoon brown sugar
  • 1/4 cup reserved ramen cooking water
  • Optional: 1 soft-boiled egg
  • Optional: Sliced green onions for garnish
  • Optional: Sesame seeds for garnish

Instructions

  1. Cook the ramen noodles according to package directions, omitting the seasoning packet. Before draining, reserve about 1/4 cup of the hot cooking water. Drain the noodles well.
  2. While the noodles cook, prepare the sauce. In a small bowl, whisk together the sweet chili sauce, soy sauce, sesame oil, minced garlic, grated ginger, and brown sugar.
  3. Return the drained noodles to the pot or a separate skillet over medium heat.
  4. Pour the prepared sauce over the noodles. Add the reserved cooking water.
  5. Toss everything together quickly, cooking for 1 to 2 minutes until the sauce thickens slightly and coats the noodles evenly. You want a sticky glaze.
  6. Transfer the ramen to a serving bowl.
  7. Top immediately with a soft-boiled egg, sliced green onions, and sesame seeds, if using. Serve hot.
