1.5 lbs Salmon fillets
2 tablespoons Soy Sauce
1/4 cup Sweet Chili Sauce
1 tablespoon Rice Vinegar
1 teaspoon Sesame Oil
1 clove Garlic, minced
1 teaspoon Ginger, grated
2 cups Cooked White Rice
1 cup Broccoli florets
1 Red Bell Pepper, sliced
1/2 cup Shredded Carrot
2 Green Onions, sliced (for garnish)
1 teaspoon Sesame Seeds (for garnish)
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a small bowl, whisk together the soy sauce, sweet chili sauce, rice vinegar, sesame oil, minced garlic, and grated ginger to make the glaze.
Place the salmon fillets on the prepared baking sheet. Brush half of the glaze mixture evenly over the salmon.
Toss the broccoli florets with a small amount of the remaining glaze. Arrange the broccoli, red bell pepper, and shredded carrot around the salmon on the baking sheet.
Bake for 12 to 15 minutes, or until the salmon is cooked through and flakes easily with a fork.
While the salmon bakes, reheat the cooked rice if necessary.
To assemble the bowls, divide the rice among serving bowls. Top with the baked salmon and roasted vegetables.
Drizzle any remaining glaze over the bowls. Garnish with sliced green onions and sesame seeds before you serve.
Notes
You can substitute brown rice or quinoa for white rice.
For crispier vegetables, blanch the broccoli slightly before roasting.
Adjust the amount of sweet chili sauce to control the spice level.
