Make restaurant-quality Sweet Chili Shrimp Tacos at home. This recipe delivers crispy shrimp coated in a sweet and spicy glaze, perfectly balanced with a fresh, crunchy slaw for a fun and quick dinner.

Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1/2 cup sweet chili sauce
  • 1 tablespoon lime juice
  • 1 teaspoon grated fresh ginger
  • 1/4 teaspoon salt
  • 12 small corn or flour tortillas
  • For the Slaw:
  • 2 cups shredded cabbage (green or a mix)
  • 1/2 cup shredded carrot
  • 2 tablespoons mayonnaise
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • Pinch of salt and pepper
  • Optional toppings: cilantro, sliced jalapeño

Instructions

  1. Prepare the slaw: In a medium bowl, whisk together mayonnaise, rice vinegar, sugar, salt, and pepper. Add the shredded cabbage and carrot. Toss to coat evenly. Set aside in the refrigerator.
  2. Pat the shrimp very dry with paper towels. This helps them crisp up.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Add the shrimp to the hot skillet in a single layer. Cook for 1-2 minutes per side until pink and cooked through.
  5. While the shrimp cooks, combine the sweet chili sauce, lime juice, and ginger in a small bowl.
  6. Reduce the heat to low. Pour the sauce mixture over the cooked shrimp. Toss gently for about 30 seconds until the shrimp is fully coated and the sauce is slightly thickened. Remove from heat.
  7. Warm the tortillas according to package directions (a dry skillet works well for a slight char).
  8. Assemble the tacos: Place a portion of the sweet chili shrimp onto each warm tortilla. Top generously with the prepared slaw and any optional toppings. Serve immediately.

Notes

  • Drying the shrimp thoroughly before cooking is key for achieving a good sear.
  • If you prefer spicier tacos, add a pinch of cayenne pepper to the sauce mixture.
  • You can substitute pre-shredded coleslaw mix for the cabbage and carrots to save time.
