Roast cauliflower florets until crisp, then toss them in a sticky, bright, and spicy-sweet Cajun glaze. This is the exciting plant-based side dish you have been looking for.

Ingredients

  • 1 large head cauliflower, cut into bite-sized florets
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 1/4 cup honey or maple syrup
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon soy sauce or tamari
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (adjust for heat preference)
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)
  • Optional garnish: chopped fresh parsley or sesame seeds

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Place the cauliflower florets on the prepared baking sheet. Drizzle with olive oil and season lightly with salt and pepper. Toss to coat evenly.
  3. Roast for 20 to 25 minutes, flipping halfway, until the edges are lightly browned and tender-crisp.
  4. While the cauliflower roasts, prepare the sauce. In a small saucepan, whisk together the honey (or maple syrup), apple cider vinegar, soy sauce, Cajun seasoning, smoked paprika, garlic powder, and cayenne pepper.
  5. Bring the mixture to a simmer over medium heat. Cook for 2 minutes, stirring occasionally.
  6. Whisk the cornstarch slurry once more and slowly pour it into the simmering sauce while whisking constantly. Continue to cook for about 1 minute until the sauce thickens enough to coat the back of a spoon. Remove from heat immediately.
  7. Transfer the hot roasted cauliflower to a large bowl. Pour the sweet heat sauce over the cauliflower. Toss gently until every piece is fully coated in the sticky glaze.
  8. Serve immediately, garnished with fresh parsley or sesame seeds if desired.

Notes

  • For the crispiest cauliflower, make sure your florets are dry before tossing them with oil.
  • If you prefer a thinner glaze, reduce the amount of cornstarch in the slurry slightly.
  • If you do not have Cajun seasoning, combine paprika, garlic powder, onion powder, salt, black pepper, oregano, and thyme.
